Physical Fortification of Rice with Iron

Rice is the staple food of half of the world population. Therefore it is a suitable food vehicle which can be used in a fortification program. When micronutrient deficiencies are considered iron deficiency is prominent among rice consuming population. Therefore with this study, a new rice fortification technology has been developed understanding the capability of rice structure to uptake iron. Rice kernel structure specially its porosity, processing conditions, fortificant concentration and the effect of other components present in rice plays a major role in iron uptake by rice. Therefore a better understanding about these parameters will help to scale up the technology in order to cater people in the world with a better fortified rice product.
